
This week I am really busy. I took the week off to help Tony with our house. This leave little time to cook. With being the case I thought I would share with you one of my cold lunch staples this year. I have been making the Shawarma Spiced Salad that I shared before. I worked in something new which uses shirataki noodles. If you are not familiar with Shirataki noodles, they are translucent, traditional Japanese noodles made from the konjac yam. They only have a few calories and are low carb. The properties of these noodles make them a great cold lunch. The dressing isn’t hard to make, but requires peanut butter powder. Using the powder versus the stuff in the jar is about half the fat and calories. You get the peanut butter flavor without sacrificing your daily calorie count. Cold Noodle Salad with Peanut Soy Dressing
Serves 1
- 1 Tbsp peanut butter powder
- 3 oz, Poached Chicken Breast, chopped
- 2 inch section, English Cucumber, chopped
- 1 serving Shirtaki Noodles, rinsed and drained
- 1 clove, Garlic
- 1 Tbsp, Sesame Oil
- 1 Tbsp, Rice Vinegar, Unseasoned
- 1 Tbsp, Light Soy Sauce
- Sweetener to taste
- Salt to taste
Add the noodles, chicken and cucumber to a bowl. In a separate bowl mix the peanut butter powder, soy sauce, sesame oil, sweetener and rice vinegar. Toss the dressing with the noodles. Adjust for salt and sweetener. Serve cold.
