Lower Carb Flourless Peanut Butter Joy Bars

It’s interesting how older generations view non-marriage relationships. My mother in law right now is in a relationship with a gentleman about her age. They both get frustrated with each other, but keep sticking it out. They both seem to want to break up frequently. In my view, I would get rid of someone who I am not getting along with if I wasn’t married. Her view is to stick it out like they are married. I don’t care how old you are, if you are not happy, get rid of the partner and get a new one. I guess I’d rather be alone than in a bad relationship.

This week I am doing a simpler dessert from last week. I am starting with a recipe from Hungry Happens for Flourless Almond Joy Bars. This recipe is dead simple. Mix a few ingredients and bake. Sometimes that’s just what you need. Here are the original stats:

Here’s what I changed:

  • I replaced the almond butter with peanut butter powder to reduce the calories.
  • I replaced the bananas with silken tofu to reduce the sugar and up the protein.
  • I replaced the pancake syrup with a sugar free variety to lower the sugar.

Lower Carb Flourless Peanut Butter Joy Bars

Makes 9 Bars

  • 1.5 cups of pureed silken tofu
  • 1 cup peanut butter powder, reconstituted
  • 1/3 cup sugar free pancake syrup
  • 1 large egg
  • 1/4 cup coconut flour
  • 1/4 cup unsweetened coconut shreds
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1/2 cup chocolate chips (plus more for garnish)
  1. Preheat oven to 325 F. Line an 8×8″ brownie pan with parchment paper.
  2. Throw everything into a bowl and mix until just combined.  Transfer the batter to your pan, smooth out the top with a rubber spatula and top with some more chips and coconut shreds.
  3. Bake for around 22-25 minutes or until toothpick comes out clean.
  4. Allow to cool completely prior to slicing.
